Pancakes are a must on Shrove Tuesday...... here's our easy peasey recipe to make sure your pancakes turn out perfect and ready for your favourite topping :-)
Basic Pancake Recipe
Method
- 100g plain flour
- 2 eggs
- 300ml semi-skimmed milk
- 1 tbsp sunflower oil or vegetable, plus extra for frying
- a pinch of salt
Method
- Put the flour and a pinch of salt into a large mixing bowl, crack the eggs into the middle, then pour in 50ml of the milk and 1 tbsp oil.
- Start whisking from the centre, gradually incorporating all the flour into the egg, milk and oil then beat to a smooth, thick paste.
- Continue whisking and add more milk to loosen the batter. Leave to stand for 30 mins, to allow the starch in the flour to swell.
- Heat the pan and wipe it with oiled kitchen paper. Ladle a little batter into the pan swirling the pan to create a thin, even layer then DO NOT TOUCH for about 30 secs until ready to turn.
- Flipping pancakes: Once the underside is golden and crispy it's time for the fun bit. Loosen the edges of the pancake jiggle it to the edge of the pan and toss it into the air.
